Celery comes from the same group fennel and parsley are in, the Umbelliferae family. 

White celery is typically grown away from sunlight and in the shade. This gives it less amounts of chlorophyll than its green members. 

Celery is crunchy and is used in a variety of recipes and in soups or salads. Being naturally salty, its juice can blend well with sweet juices. 


The leaves in celery have high levels of vitamin B1, B2, B6 and C, while the stem is rich in sodium, magnesium, potassium, calcium, folate, phosphorus, and essential amino acids. Nutrients in the fiber are released during juicing, helping to improve and stimulate bowel movements.

The natural organic sodium in celery is very safe for consumption. When looking for good celery, go for the greener shade as that means it has chlorophyll. Check to ensure that the ribs are not limp but firm.

To keep celery fresh, wrap in a plastic bag or in a sealed container. Leaving out celery can make it age quickly and go bad. To regain its crispness, just drop some water on the wilted celery and leave in the fridge for a few hours. 


Celery is such a wonderful plants, and is so because it has its own “pesticide” to keep it free of fungi. Psoralens is the layer that prevents fungi, and it doesn’t digest well with some people.

If that is the case, you could have a sensitivity to psoralens. A lot of people who have eaten celery when they had low blood pressure, saw the pressure drop lower. If you find this is happening, then refrain from consuming celery.
