How to Make this Creamy Cancer-Fighting Broccoli Soup Recipe

Today, in America, many children are exposed to so much processed junk food and fast food that they end up avoiding healthy whole foods altogether. Especially leafy, green vegetables.

Many find it as disgusting and its a shame, because vegetables are the most nutrient-abundant source of food on our planet. For all the parents who are secretly resorting to various tricks to “conceal” vegetables in your kid’s meals, look no further: here’s a healthy recipe for a delicious soup that will do that. 

Submitted by a reader, Stella, this unique recipe mixes two superfoods: avocado and broccoli. Your kids will enjoy the creamy flavor of this wholesome soup so much, they’ll be asking for more servings of it!

  1 head of broccoli (steamed and cut into smaller pieces)
4 ½ cups chicken broth
2 to 3 Hass avocados
1 cup of shredded raw cheddar (you can certainly add more if you want to)
Salt and pepper to taste


1. Steam broccoli for 4 to 5 minutes, let cool, and then cut up.
2. Combine broccoli, chicken broth, and avocados, and blend to desired consistency.
3. Cook over medium heat until thoroughly warmed, and add cheese. Stir well.

This recipe makes 4 servings.

Eating Broccoli Has Never Been This Enjoyable!

Broccoli has twice the amount of vitamin C an orange has, almost as much calcium as whole milk (in amore absorbable form, too), and has vitamin A and E as well. Broccoli contains selenium, which is proven to have anti-viral and anti-cancer properties. When you do purchase broccoli, be sure to choose one with tight green florets, that have firm and moist-appearing stalks, that are heavy for their size. Avoid any broccoli that has yellow florets, and dried stems. If you do buy fresh broccoli, it will keep that way for 10 days, stored away in your cold refrigerator. Avocado doesn’t just offer delicious creaminess, but also its wide variety of nutrients to the recipe. In fact, avocado is a popular superfood due to its high nutritional benefits. It is abundant in vitamins E, /b vitamins, folic acid, healthy fats, and potassium. 

Carotenoids are cancer-fighting and are found in avocado, and you can get them from the dark-green portion of the fruit—closest part of the avocado skin. In order to preserve the area with the highest concentration of anti-oxidants, peel the avocado with your hands almost similar as you would with a banana. 

Final tip: Instead of using canned chicken stock, try homemade chicken broth. Homemade bone broth is found to be abundant in amino acids that include anti-inflammatory effects, as well as a high level of magnesium, calcium, and many various nutrients that aid in healthy bone growth. Bone broth is also said to heal the lining of your gut, and is efficient in speeding up the healing process from illness.
