Coconut water kefir is actually fermented coconut water. It is a probiotic drink that contains many vitamins, electrolytes, and minerals.
The mineral and vitamin content in coconut water also has beta carotene, Thiamin, Riboflavin, Niacin, pantothenic acid, folates, and vitamins A, B6, C, E, and K. What is imperative about this mix, is that it is better than regular kefir, and doesn’t have the substances that dairy has such as casein and lactose. This means that your body will digest these probiotic benefits much efficiently. Coconut water kefir has a potent effect on our digestive system than any other dairy product such as yogurt.
We do know that dairy forms acid and not many can handle that. The main electrolytes or minerals found in coconut water, are similar as those found in human blood.

How to Make Coconut Cinnamon Kefir Water
There are about 3 ways to create your very own coconut water kefir:
1. Use existing kefir as a starter
2. Use a kefir starter culture
3. Use kefir grains
This is a favorite method of mine. Making water kefir with grains is the perfect way to go. You will need kefir grains (either milk or water kefir grains). This is more of an economical method since grains will multiply fast, which means you will have them constantly on hand.
7 cups fresh coconut water
5 tablespoons of water kefir grains
1 Ceylon cinnamon stick (my favorite cinnamon sticks)
Add 7 cups of coconut water to your 1/2 gallon jar.
Place the water kefir grains in the coconut water and the cinnamon stick. Cover loosely and let it sit for 48 hours (not longer). Do not let it ferment too long; it might explode.
Once fermented, coconut water will become cloudy and lighter in color. The kefir grains will rise up to the top when they are done culturing. When the culturing process is complete, remove the kefir grains.
Grains can be used immediately for a new batch or you can store them in water in the refrigerator.
